You can create ISO's with 3rd party programs like UltraISO or by using the DD comand in the ESX Service Console. If you are using a Datastore ISO File make sure you select "Connected at Power On" If using a Client Device instead then open a remote console to the VM and click the Virtual CD-ROM button and select "Connect to ISO image" Once you have your ISO you simply edit the CD-ROM for the VM and map it to the ISO file, to boot you need to hit ESC at the VMware BIOS screen to select the Boot Menu. Multiple VM's can map to ISO's at the same time. No, you just create a ISO for each separate OS you want to install and then mount that ISO on the VM so it can be used to install the OS.
